Experience: 5–8 years in F&B service within a four- or five-star hotel, fine dining restaurant, or luxury hospitality, with 2–3 years in a supervisory or captain role.
Education: Diploma or degree in Hotel & Restaurant Management or equivalent preferred.
Skills & Knowledge:
Strong understanding of service standards, guest relations, table management, and beverages
Leadership, communication, and organizational skills
Proficient in POS systems and basic computer operations
Knowledge of HACCP and safety standards
Attitude: Proactive, guest-focused, detail-oriented, and committed to service excellence.

The F&B Captain supervises and coordinates service activities in the restaurant, bar, or banquet outlet to ensure guests enjoy an outstanding dining experience. Reporting to the Restaurant Manager or Outlet Supervisor, this role is key to maintaining service quality, training staff, handling guest concerns, and supporting departmental goals.
Key Responsibilities:
Supervise and coordinate service staff to ensure high-quality, efficient service.
Oversee table setups, reservations, and section allocations for smooth service flow.
Greet and interact with guests professionally, anticipating needs and providing personalized service.
Handle guest complaints or feedback, escalating major issues as necessary.
Ensure staff compliance with service standards, grooming policies, and procedures.
Conduct pre-service briefings to communicate menu changes, promotions, and guest preferences.
Collaborate with kitchen and bar teams for timely and accurate service.
Maintain cleanliness, organization, and hygiene of the service area (HACCP compliance).
Monitor and control operating supplies, glassware, and equipment; report shortages or breakages.
Assist in staff training, mentoring, and performance monitoring.
Support management with inventory counts, stock requisitions, and cost control.
Ensure accurate billing, cash handling, and POS transactions.
Lead by example during busy periods, maintaining calm under pressure.
Collaborate on events, special functions, and promotional activities.
Ensure compliance with safety, sanitation, and legal regulations.
